In specialty coffee, we talk endlessly about processing methods, roast profiles, terroir. But variety? Most people just glance at it on the label and move on. That's a mistake. Because variety is the genetic blueprint. It determines what a coffee can taste like before the farmer, the processor, or the roaster ever touch it.
And if you want to understand varieties, you have to start with the one that started everything: Typica.
Different varieties produce different amounts of sugars, organic acids, lipids, and aromatic precursors. That's not terroir. That's not processing. That's DNA. A Bourbon will never taste like a Gesha, no matter how perfectly you ferment or roast it. The raw material is fundamentally different.

The Family Tree
Almost every Arabica variety you've ever tasted traces back to one of two lineages:
Typica: The original Arabica that spread from Ethiopia to Yemen, then to India, Java, and eventually the Americas. It's the trunk of the tree. Bourbon, Mundo Novo, Caturra, Catuaí, SL28, SL34, Gesha, Maragogipe, Kona, Blue Mountain, Pacamara... all of these are either direct mutations or descendants of Typica. When you drink a Typica, you're tasting the closest thing to what coffee was before humans started selecting and crossbreeding for yield, disease resistance, and size.
Bourbon: A natural mutation of Typica that developed on the island of Réunion (formerly Bourbon). Slightly higher yields, rounder cherries, and a flavor profile that tends toward more sweetness and body compared to Typica's cleaner, more delicate character.
Everything else branches out from there. Caturra is a dwarf mutation of Bourbon. Catuaí is a cross between Caturra and Mundo Novo. SL28 and SL34 were selected from Bourbon and Typica lines in Kenya. Even Gesha, the darling of the auction circuit, is a Typica-lineage variety originally collected from the forests around Gesha, Ethiopia.

So What Makes Typica Special?
Typica is not a high-scoring showoff. It doesn't hit you with explosive tropical fruit bombs or wine-like fermentation funk. What it does is something quieter and, in my opinion, harder to achieve: clarity.
A good Typica tastes clean. Almost transparent. You get a gentle sweetness, soft florals, sometimes a tea-like quality that reminds me of a well-brewed jasmine green. The acidity is there, but it's round and mild. Not the bright citric punch of an SL28 or the tropical sharpness of a Gesha. More like a soft, sweet citrus that doesn't demand attention but rewards it.
The problem? Typica is a nightmare for farmers. It yields less than almost any other commercial variety. The trees are tall and harder to harvest. It's highly susceptible to coffee leaf rust (la roya), which has devastated Typica plantations across Central and South America over the past decade. Many farmers have been forced to replace their Typica trees with rust-resistant hybrids like Castillo or Catimor just to survive.
That means every time you drink a pure Typica, you're tasting something that exists despite the economics working against it. A farmer chose to keep those trees because they believe in the cup quality, even when the yields don't make financial sense.

Here's something that bothers me a little about our industry: we celebrate Gesha at $200/kg and barely acknowledge the Typica that Gesha descended from. We chase novelty. New varieties, new processing experiments, new fermentation cultures. And I get it. Innovation is exciting. Butthere's something valuable about going back to the source and appreciating a variety that doesn't need any tricks to taste beautiful.
My Take: Variety isn't just another line on a label. It's the foundation that everything else builds on. And Typica is where that foundation was laid. If you ever get the chance to try a well-grown, carefully processed Typica, pay attention. Not for fireworks, but for clarity. Sometimes the most interesting thing you can do is go back to where it all began.
